Juice of 1 lemon
1/4 cup olive oil
5 sprigs parsley, finely chopped
1 clove garlic, finely chopped
1 shallot, finely chopped
Salt and pepper, to taste
1 1/2 pounds cubed bison sirloin
1. Combine lemon juice, olive oil, parsley and garlic in a bowl and season to taste with salt and pepper. Add cubed bison and toss until the bison is coated in the marinade. Let sit in the fridge for at least 2 hours, then place cubed bison on skewers and reserve the marinade.
2. Heat the grill to high then cook the skewers brushing with reserved marinade for 7 minutes, then flip and cook until desired doneness. Let rest for 10 minutes before serving.
Chopped red onion
1. Grill the pitas until they are warm and pliable, then serve bison souvlaki on the pitas topped with chopped tomato, red onion and tzatziki with lemon wedges alongside.
